the BEST Pumpkin Recipes to try this Fall
I am OBSESSED with everything pumpkin. Every year, when fall comes around, i look forward to making and trying different pumpkin spice recipies. This year, I have compiled a list of some of the best healthy pumpkin recipes. I created some of them, and some of them were created by my favorite wellness influencers. I tagged all of them so defiantly go and check out their other delicious recipes.
Breakfast
Pumpkin Spice Overnight Oats (single serve)
- 1/2 cup oats
- 1/2- 3/4 cup milk of choice
- 1/4 cup pumpkin purée
- 1/4 of a mashed banana or 1 tbsp maple syrup (for sweetness)
- 1 tsp pumpkin spice
Throw all of that in a mason jar, shake it up, and leave in the fridge overnight! it should be thick and oatmeal-like in the morning. I like to serve mine with fruit, nut butter, and granola.

Pumpkin Pancakes by @frozen_bananas_ (2-3 servings)
- 1 1/3 cup oat flour
- 2 tsp baking powder
- 1 tsp pumpkin pie spice
- 1/2 cup pumpkin puree
- 1 cup almond milk/ milk of choice
- 1 egg
- 2 tbsp maple syrup
- 2 tsp vanilla extract
Whisk together pumpkin purée, milk, egg, maple syrup, and vanilla
Add in oat flour, baking powder, and pumpkin pie spice
Scoop onto a lightly greased pan on medium heat with a 1/4 cup measurement
cook each side about 2-3 minutes or until the edges are solid enough to flip
Serve with your favorite toppings! I love maple syrup, nut butter and bananas!

Pumpkin Smoothie Bowl (single serving)
- 2 frozen bananas
- 1/4 cup pumpkin puree
- 1 tsp pumpkin pie spice
- 1/4 cup milk of choice
Blend all of these ingredients in your blender until thick and combined. I like topping my smoothie bowls with granola, nut butter, and fruit!

Pumpkin Cheesecake French Toast by @kaelaherrecipies
- 1/4 cup pumpkin
- 2 eggs
- 2 tbsp maple syrup
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla
- 4 pieces of bread
Heat and grease a pan on medium heat
Add in everything but the bread to a bowl and whisk to combine
Dip bread into egg mixture and cook 3-5 minutes on each side.
Serve with a spread of cream cheese and maple syrup!

Dessert
Healthy Pumpkin Bread by @rebeccaaleigh
- 1 can pumpkin puree
- 2 eggs
- 1/3-1/2 cup honey, maple syrup, or coconut sugar
- 2 tbsp oil (I used coconut)
- 2 tbsp almond milk
- 2 & 1/4 cup oat flour
- 2 tbsp pumpkin pie spice
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup dark chocolate chips
Whisk together pumpkin puree, eggs, sweetener, oil, and milk
Combine flour, pumpkin pie spice, baking soda, and sea salt
Mix all together and fold in chocolate chips
Pour into a lined, lightly greased pan
Bake at 350 for 50-60 minutes
I sprinkled chocolate chips on top at the end

Pumpkin Oatmeal Cookies by @nataliesnaturalfood
- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1/3 cup almond butter or peanut butter
- 3-4 tbsp maple syrup
- 1 tsp pumpkin pie spice
- 1/2 tsp nutmeg
- Pecans or Chocolate optional!
Mix together all ingredients
Shape together 8-10 cookies and place on a lined baking tray
Bake at 350 for 10-12 minutes or until bottoms are slightly brown

Pumpkin Spice Chickpea Cookie Dough by @thehealthyhaff
- 1 can chickpeas
- 2 tbsp maple syrup
- 1/4 cup dates
- 3 tbsp pumpkin puree
- 1 tsp vanilla
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1/3 cup chocolate chips
- a pinch of salt
Strain and rinse the can of chickpeas. You can remove the skins if you want a a smoother texture
Throw all of the ingredients into a food processor or blender except the chocolate chips
Blend to thoroughly combine
Add in chocolate chips
Store in the fridge for up to 3 days!

Pumpkin Spice Mug Cake by @hannahharvestinghealth
- 1 egg
- 1-2 tbsp maple syrup
- 3 tbsp pumpkin puree
- 1/4 tsp baking powder
- 3 tbsp almond flour
- 1 tbsp coconut flour
- 1 tsp pumpkin pie spice
In a mug, whisk together egg, puree, and maple syrup
Stir in the rest of the ingredients
Microwave for 2 minutes
I like to serve mine with nut butter, chocolate chips, and apples
