6 Healthy Breakfast Ideas You Probably Haven't Heard Before

During the pandemic, most of us have gotten stuck in a rut of eating a bunch of junk food and therefore, we're not really giving our bodies essential and wholesome nutrients. The thought of eating healthy may sound daunting and gross to you, but trust me: eating healthy does not have to be boring!!! No, you don't have to eat straight kale all day and not enjoy your favorite foods. There are so many healthy recipes and meal ideas that are so delicious and don't involve a ton of effort or a lot of time. These recipes are perfect for any student in online school who doesn't have that much time to cook and wants to start eating healthier. They require simple ingredients that can be adjusted or changed based on what you have at home. Personally, eating a healthy breakfast in the morning makes me feel so productive and it is scientifically proven to improve brain function and energy. Here are my go-to healthy breakfast ideas!


Superfood Smoothie Bowl

- 1 frozen banana

- 1/2 cup frozen strawberries

- 1/3 cup frozen mango

- 1/3 cup frozen blueberries

- 1/4-1/2 cup oat milk

- Optional: 1 heaping teaspoon of spirulina powder

- granola and any other toppings


- Remember: You can substitute any fruit depending on your preference, this is just what I like!


Directions:

- Put all fruit and milk in a blender and blend until smooth

- Use a spatula or a spoon to scrape down the sides

- Be patient, you should end up with a thick, ice cream like consistency

- When it is blending smoothly, add in spirulina and blend until combined

- Put granola in the bottom of your bowl and put smoothie on top

- Put any other fruit, chia seeds, hemp seeds, or honey on the top of your bowl and enjoy!


Protein Breakfast Scramble

- 2 large eggs

- Half of a sweet potato

- Sausage of choice (I use morning star vegan maple sausage)

- Giant handful of Kale

- 1/4 cup chopped red bell pepper

- Avocado

- Salsa

- Olive oil, salt, pepper, and whatever other seasonings


Directions:

- Cut sweet potatos into small cubes and toss them with a little bit olive oil and salt

- Put those on a lined baking sheet and into the oven at 400 until golden brown and tender (I usually complete this step the night before so that I can quickly throw in all the other ingredients in the morning)

- Cook sausage depending on its cooking instructions and chop it after

- Whisk two large eggs in a bowl and add in roasted potatoes, chopped sausage, kale, and bell pepper

- Put mixture into a pan with olive oil and cook until eggs are done

- Top with sliced avocado and salsa


Basic Healthy Stovetop Oatmeal

- 1/2 cup dry oats

- 1/2 cup milk of choice (I use oat milk)

- 1/2 cup water

- Honey

- Fruit, peanut butter, granola, hemp seeds and anything else for toppings


Directions:

- Combine water and milk in a saucepan on high heat and bring to a boil

- When at a boil, add oats and turn heat to low

- Stir oats frequently and wait until thickened (usually 4-7 minutes)

- When almost at your desired thickness, add in honey and stir

- Serve in a bowl and top with fresh fruit, peanut butter, and granola

Basic Breakfast Sandwich

- 1 or 2 large eggs

- 1 English muffin

- Spinach

- Tomato

- Hummus

- Avocado

- Everything bagel seasoning


Directions:

- Toast English muffin

- Cook eggs (I like to do a scramble but you can do sunny side up or over easy)

- Spread hummus onto one side of the muffin and mash avocado on the other and add everything bagel seasoning

- On top of hummus, layer spinach, egg, tomato

- Put the top on and enjoy!


Nut Butter and Fruit Quesadilla

- Nut butter

- Banana

- Blueberry

- Strawberry

- Optional: Honey


Directions:

- Cut a slit in your tortilla halfway up the middle (were doing the Tik Tok tortilla hack!)

- Spread your nut butter (I use peanut) on one quarter

- Lay thinly sliced bananas on another quarter

- Add bluberries to the next quarter

- Add thinly sliced strawberries to the final quarter

- Fold quarters over one another

- Get a pan hot and place your folded quesadilla on the pan

- Flip when golden brown on one side and brown on the other

- Serve and enjoy!


Hummus Toast

- 2 pieces of bread

- Hummus

- Cucumbers

- Cherry Tomatos

- Red Pepper Flakes


Directions:

- Toast Bread

- Thinly slice cucumbers and chop tomato

- Spread hummus onto toast and layer tomato and cucumbers on top

- Optional: top with red pepper flakes or everything bagel seasoning
