3 of my FAVORITE Tofu Recipes
Tofu and I have had a rocky relationship. For as long as I can remeber it was a "texture thing." However, for the past few months, I have been working to rescue that relationship because i've been trying to eat more plant based. It all started when I tried grilled tofu in a burrito at one of my favorite restaurants. I was genuinly shocked at how amazing it was. One thing led to another and I tried a tofu scramble. It was a game changer.
Ever since then, I've tried experiementing with tofu at home. I've had some fails, but it hasn't knocked me down. I've tried many more recipies that I'd love to share with you guys, but for now, here are 3 of my favorites. If you are a tofu skeptic like I was: here how to make tofu not taste like s***.
Pan-fried Tofu Dumplings
Ingredients:
400g grated or diced tofu
2 grated carrots
1 small grated or diced broccoli head
1/2 a chopped white onion
1-3 minced garlic
3 tablespoons soy sauce
2 tablespoons tomato paste
salt, pepper, paprika to taste
rice paper sheets
Instructions:
Add garlic and onion to a pan with some oil and fry until golden and fragrant
Add the carrots and broccoli and fry for a few minutes (2-4) until tender
Add tofu, tomato paste, soy sauce and seasonings, mix and fry again until combined
Wet rice paper sheets and fill. I cut mine in half and then did about 2-3 tablespoons of the mixture to make them more dumpling size
Add some oil to a pan and sear until crispy
Serve with some soy sauce and edamame
Crispy Tofu
Ingredients:
Extra firm tofu
1 tbsp olive oil
1 tbsp soy sauce
1 tbsp nutritional yeast
1/2 tsp paprika
1/2 tsp garlic powder
1.5 tbsp cornstarch
Instructions:
Press tofu for 10 minutes and pat dry
Cut into about 1 inch blocks
Toss tofu in a bowl with oil, soy sauce, nutritional yeast, and spices, adding in the starch slowly
Preheat oven to 425 degrees and spread out tofu on a lined baking tray
Bake for 15 minutes, toss around, and bake for another 15
Serve on top of salads, nourish bowls, or in burritos
Tofu Scramble
Ingredients:
Extra firm tofu
Onion
1/2 tsp Garlic powder
1/2 tsp Turmeric powder
1/4 tsp Salt
Pepper
1/4 tsp Paprika
Any type of veggies!- I used kale, bell pepper, cabbage, sweet potato
Toppings!- I topped with tomato, spouts, avocado
Instructions:
Cut off a portion of tofu, I cut off about 1/3-1/2 of the block
Mash that up with the spices
Dice onion and sauté in a pan with oil until fragrant
Add crumbled tofu and diced veggies to the pan and cook on medium-high heat until golden and slightly crisp
Serve with toast, avocado, and some salsa!
